Stir Fried Preserved Eggs with Crispy Basil – Kai Yiew Ma Kra Prao Krob ไข่เยี่ยวม้ากะเพรากรอบ

Preserved egg or century egg is very popular in Thailand and also in China. If you like this egg, you have to try this dish.

Preserved eggs will be deep fried until crispy outside and then stir fried with minced pork same as traditional Pad Kra Prao, finally topping with crispy basil.
It is a simple menu and easy to cook but it tastes really good.

Ingridients: for 2 portions
  • 3 preserved eggs
  • 1/4 cup all-purpose flour
  • 1 cup holy basil
  • 100 g. mince pork
  • 2 tbsp. garlic
  • 5-7 red chili
  • 1 tbsp. fish sauce
  • 2 tbsp. oyster sauce
  • 1 tsp. sugar
  • 3 tbsp. oil
  • oil for deep frying
How to cook:
  1. Cut eggs and toss with flour. Set aside
  2. Heat oil for deep frying over medium heat
  3. Deep fried holy basil 10 seconds
  4. Add eggs and fried them around 1-2 minutes. Set aside
  5. Add oil, garlic, and chili into the wok
  6. Keep stirring
  7. Add mince pork
  8. Stir fried nearly cook or around 2-3 minutes
  9. Season with fish sauce, sugar, and oyster sauce
  10. Mix well
  11. Serve fried preserved egg with stir fried pork
  12. Ready to serve :P
