- 300 g. chicken breast
- 1 medium size onion
- 3 large dry chilies
- 1/2 cup cashews nuts
- 2 red chilies
- 10 Thai garlic cloves
- 3-4 spring onions
- 2 tbsp. all propose flour
- 1 cup palm oil
- 1 tbsp. cooking sauce
- 2 tbsp. oyster sauce
- 1 tbsp. sugar
- 1/4 cup of water
- 1/4 tsp. salt
- 1/4 tsp. ground white pepper
- Cut spring onion into 1 inch
- Cut onion into bite size
- Cut the long red chilies into julienne
- Cut the dry chili into 1cm length and remove the seed
- Crushed garlic and roughly chopped
- Cut chicken into bite size pieces
- Prepare seasoning sauce by mixing all ingredients. Set aside
- Deep fried the cashew nuts on medium-low heat until light gold
- Lightly fry dry chilies until shiny and get beautiful deep red color
- Seasoning chicken with salt and ground white pepper
- Toss chicken pieces into flour
- Fried chicken until light gold
- Add cooking oil
- Stir fry garlic lightly until fragrant
- Add onions
- Add fried cashews nuts, fried dry chilies, and fried chicken
- Toss everything together about 30 seconds
- Add sauce mixture
- Add red chilies and spring onion
- Toss over the heat for 30 seconds until done
- Serve with rice :P
