Blue Sweet Sticky Rice with Sweet Golden Drops (Thai Dessert) – Khao Neeo Na Kai Mang Da ข้าวเหนียวมูนหน้าไข่แมงดา - ข้าวเหนียวมูนห้าสี

If you like to eat sweet sticky rice, you do not have to miss this recipe. It is sweet sticky rice in blue color that made from butterfly pea juice. In this recipe, sticky rice will be served with mini sweet golden drops which made from egg yolks in boiled syrup. 

The yellow color from mini sweet golden drops will go nicely with blue color from sweet sticky rice.
Ingridients: for 3-4 portions
  • 1 1/2 cup sticky rice, clean and drain
  • 1/2 cup dried butterfly pea
  • 4 cup water
  • 3/4 cup coconut milk
  • 1/2 cup sugar
  • 1 tbsp. salt
  • 2-3 pandan leave
  • 1/2 cup ripe coconut, shred
  • Banana leaf cup
Ingridients: Sweet egg yolk topping
  • 5 duck egg
  • 2 tbsp. tapioca flour
  • 2 cup sugar
  • 2 cup water
  • 2-3 pandan leave
Ingridients: Coconu cream topping
  • 1 cup coconut cream
  • 2 tsp. rice flour
  • 3/4 tsp. salt
  • 2 tbsp. sugar
  • 2-3 pandan leave
How to cook:
  1. Boil water and dried butterfly pea
  2. Soak sticky rice with mixture around 3-4 hours or overnight
  3. Drain and strain
  4. Pour on white cloth and steam 25-30 minutes
  5. Boil coconut milk
  6. Add salt, sugar, and pandan leaves over lower heat
  7. Rest them in bowl
  8. When sticky rice cooked, transfer to mix well with coconut milk mixture and cover. Set aside
  9. Seperate egg yolk and strain with white cloth
  10. Add tapioca flour and mix well
  11. Add sugar and water in brass pan
  12. until sugar dissolves completely
  13. Add pandan leave
  14. Seperate 1 cup of syrup
  15. Make banana cone
  16. Add egg mixture into cone and drop in hot syrup
  17. When the sweet egg yolk is lighten, remove and rest them into part of cool syrup
How to cook: Coconut cream topping
  1. Mix coconut milk, rice flour, sugar, salt, and pandan leaves
  2. Stir until flour dissolve completely
  3. Turn on over lower heat until thick
  4. Rest them
  5. Serve sticky rice with sweet egg yolk on banana leaf cup
  6. Ready to serve
