Stir Fried Chicken with Cashew Nuts (Thai Food) - Gai Pad Med Mamuang ไก่ผัดเม็ดมะม่วงหิมพานต์

Stir fried chicken with cashew nuts is one of the Thai popular and delicious food. Everyone love this dish because it is easy to eat and have not too strong flavor.

It is best to cook on weekend and enjoy eating with your family. It takes a bit long to cook this menu dish.

Suit for both adult and children, it can be a great dish side dish. You can eat with steamed rice, perfectly delicious as well.
Ingridients:
  • 300 g. chicken breast
  • 1 medium size onion
  • 3 large dry chilies
  • 1/2 cup cashews nuts
  • 2 red chilies
  • 10 Thai garlic cloves
  • 3-4 spring onions
  • 2 tbsp. all propose flour
  • 1 cup palm oil
Ingridients: For Sauce Mixture
  • 1 tbsp. cooking sauce
  • 2 tbsp. oyster sauce
  • 1 tbsp. sugar
  • 1/4 cup of water
  • 1/4 tsp. salt
  • 1/4 tsp. ground white pepper
How to cook:
  1. Cut spring onion into 1 inch
  2. Cut onion into bite size
  3. Cut the long red chilies into julienne
  4. Cut the dry chili into 1cm length and remove the seed
  5. Crushed garlic and roughly chopped
  6. Cut chicken into bite size pieces
  7. Prepare seasoning sauce by mixing all ingredients. Set aside
  8. Deep fried the cashew nuts on medium-low heat until light gold
  9. Lightly fry dry chilies until shiny and get beautiful deep red color
  10. Seasoning chicken with salt and ground white pepper
  11. Toss chicken pieces into flour
  12. Fried chicken until light gold
  13. Add cooking oil
  14. Stir fry garlic lightly until fragrant
  15. Add onions
  16. Add fried cashews nuts, fried dry chilies, and fried chicken
  17. Toss everything together about 30 seconds
  18. Add sauce mixture
  19. Add red chilies and spring onion
  20. Toss over the heat for 30 seconds until done
  21. Serve with rice :P
