Stuffed Cucumber Soup: Gang Jeud Tangkwa Yutt Sai แกงจืดแตงกวายัดไส้

Today, Cooking recipe will provide another soup recipes which is called stuffed cucumber soup. It is a healthy food.

A simple menu for everyone, you can cook this recipe easily at home, just have cucumber and pork. Stuffed marinated minced pork in cucumber and boiled until done and you will have a delicious soup at home, served hot with steamed rice is a nice combo meal.

Ingridients: for 5-6 portions
  • 500 g. cucumber
  • 8-10 shitake mushroom
  • 2 tbsp. light soy sauce
  • 2 tsp. sugar
  • 2 tbsp. coriander leaves
  • 1000ml. water
  • 300 g. mince pork
  • 1/2 cup carrot, chooped
  • 1/4 cup spring onion, chooped
  • 1 tbsp. soy sauce
  • 1/2 tsp. pepper
How to cook:
  1. Marinate pork with soy sauce, pepper, carrot, and spring onion
  2. Rest them 10 minutes
  3. Peel and remove seed of cucumber
  4. Stuff pork into cucumber
  5. Boil water
  6. Add sugar, soy sauce, shitake mushroom, and stuffed cucumber
  7. Simmer around 15-20 minutes over lower heat
