Pumpkin custard or Sangkhya Lapov in Khmer is a popular Khmer dessert that is easy to find at the dessert shop or market. It is served after lunch or dinner at some restaurant.
Sangkhya is a sweet custard that we stuff in the whole pumpkin and steamed it. This menu is quite easy to do ta home and also nice to show everyone and serve with the whole pumpkin.
Ingredients:
- 1.3 pounds butter squash
- 2 cups coconut milk/cream
- 1/4 teaspoon salt
- 4 tablespoons palm sugar
- 2 fresh pandan leaves
- a steamer and water to steam the squash
